A full calendar does not pay the daily debit. For a food truck or catering business carrying MCA debt, booked events become cash only after the food is bought, the staff is paid and the client remits the balance.

The advance collects a fixed sum each day the account holds funds. The season delivers revenue in clusters with quiet months between them. That structural mismatch, more than any single slow week, is what places seasonal operators in default by winter.

1. Deposits, Balances and Spendable Cash

A customer deposit can arrive long before the business performs the service. The owner should identify the expenses and possible refund obligations attached to that payment before allocating any of it to the advance.

Review the customer agreement rather than assuming every deposit is unrestricted revenue. Cancellation, postponement and final payment terms can change the cash available to the business, and a catering order may require food purchases, staff commitments and equipment arrangements before the remaining balance is collected.

For a truck, separate confirmed trading dates from invitations that have not become accepted bookings. An event listing does not establish the receipts the truck will earn there.

Keep the booking record with the relevant customer terms. The forecast should show when each cost must be funded, and the owner should be able to state the financial commitment behind any date without reconstructing the arrangement from messages.

The commissary invoice arrives monthly whether the truck rolled or not (the commissary, which catering clients will never see and health inspectors always do, charges rent for the kitchen the permit requires). Fixed obligations of this kind deserve a line in the budget before any settlement installment is promised.

And the permit renewals keep their own calendar. A truck that pauses for January still pays to remain a truck.

3. The Winter Cash Plan

There is a particular arithmetic to October for a seasonal operator, when the last festival pays out and the debits continue into the months with no events at all. An owner who plans only for the season just ending will meet December without a plan.

The useful forecast runs through the quiet months, showing debits, fixed costs and the reserves carried forward. What the operator sets aside, or fails to set aside, during peak weeks decides the winter posture.

The shortfall was, if we are being precise, not a lack of annual revenue but a distribution of it across months the debit schedule never recognized.

A replacement advance that retires one daily debit with another deserves the skepticism its structure invites. Compare the combined obligations against the quiet month cash before signing.

The debt that looked serviceable in August looks different in February. It was the same debt all along.


5. Settlement Review Before the Season Turns
